I made some roasted eggplant, cherry tomatoes w/ quinoa the other night and it was the best thing I've made in a long time (the anchovies in the sauce gave it an umami moment!). next time I make it I might skip the quinoa and use coucous....you have to rinse the quinoa first and that's a pain in the arse because the grains are so damn small and the strainer I have that has tiny mesh is small as well & I ended up just making a freaking mess of the rinsing and soaking! It didn't help either that when I opened the pkg. of quinoa I used a little too much force & suddenly there was quinoa everywhere all over the counter! mmm, that sure does look fresh & tasty!
