After coming home from our usual farmers’ markets routine, we made a simple but delicious brunch.
We bought a fresh baguette from Wild Flour Bakery and wanted to do something with that. Since it was brunch, we knew we wanted to start with eggs and cheese. We had recently opened a jar of Caramelized Apple Champagne Mustard from HerbsNZest and thought that would be a nice complement. We also thought that adding more apples would be an excellent autumnal touch. We made the eggs as a simple cheese omelet, using Barber’s Cheddar from Di Bruno Bros. and then put the omelets on the sliced baguette with a generous spread of the mustard. We topped it off with some apple from Beechwood Orchards.
This was definitely a winning entry in the simple goodness category!
