We had a nice quiet Memorial Day at home and decided to try something new for brunch and then have something simple for dinner.
For brunch, we had Savory Bacon-Cheddar Pancakes With Corn and Jalapeño using this recipe from Serious Eats. Other than cutting the recipe in half for just the two of us, we followed it closely and the result was fantastic. Both of us tend to be more savory than sweet people, so these pancakes really hit the spot.
We wanted a relaxing day, so we opted to have a nice meat and cheese spread later in the day with some wine. The day before, we went to Di Bruno Bros. to stock up. We picked up some mixed olives and roasted red peppers. For meats, we got Sicilian pepperoni, sweet soppressata, and thinly sliced speck. For cheese, we had Barber’s cheddar, Piave Vecchio, Idiazabal Etxegarai, Snowfields and Malto D’Orzo & Whiskey. We complemented all this with a head of roasted garlic, roasted nuts, and homemade crackers.
Of course, we paired this feast with some wine, in this case, a Villa des Anges Old Vines Rosé.
