We almost always get fish from Shore Catch on our weekly trip to the Rittenhouse Square Farmers’ Market, and, most of the time, we come home with their delicious cod. Which means we’re always on the lookout for new cod recipes. I had seen a recipe for pistachio crusted cod that I was intrigued by, but there were a few ingredients I wasn’t sure I wanted to include. We looked up a couple of other recipes for some ideas and then basically made an impromptu version. Basically, we started with 1/2 a cup of pistachios and then added some breadcrumbs, a couple cloves of garlic, a handful of parsley, some crushed red pepper, and a little olive oil. We put some olive oil, salt and pepper, and then put the pistachio mix on top. We baked it at 400° for 20 minutes. We put together a simple arugula salad. We really enjoyed out dinner and will probably try this again and work out more precise ingredients.
