Last week, we picked up some frozen prawns from Otolith Sustainable Seafood at Rittenhouse Farmers’ Market. We tossed around a couple of ideas as to what to make with them but settled on having them with a Fra Diavolo sauce.
Holly found a straight-forward recipe that we had ingredients for from The Food Network and we followed it uncharacteristically closely.The only difference being that we didn’t have fresh herbs so needed to use dried. Oh, and we also used WAY more garlic than the recipe calls for but that’s pretty standard practice for us.
The basic process is to coat the prawns in olive oil and crushed red peppers with a little salt and then saute them for 2-3 minutes and then remove. Using the same skillet, you then fry up onions until translucent and then toss in diced or crushed tomatoes along with wine, garlic and oregano. I actually put the garlic in a minute early to fry it up a bit first. You then simmer that for about 10 minutes until the sauce thickens. Then return the prawns to the pan for another minute or so and add the basil and parsley.
Put all that over your favorite pasta and you’re good to go.
